Fluffy Pancakes

Light and fluffy American-style pancakes

Ingredients

  • 3/4 cup all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/8 teaspoon salt
  • 1/2 tablespoon sugar
  • 2/3 cup milk
  • 1 egg
  • 1.5 tablespoons melted butter
  • Maple syrup for serving
  • Butter for cooking

Instructions

  1. Whisk together flour, baking powder, salt, and sugar
  2. In another bowl, whisk milk, egg, and melted butter
  3. Combine wet and dry ingredients, mix until just combined (lumps are okay)
  4. Heat a non-stick pan or griddle over medium heat
  5. Pour 1/4 cup batter for each pancake
  6. Cook until bubbles form on surface
  7. Flip and cook other side until golden
  8. Serve with butter and maple syrup

Tips

  • Don't overmix the batter - lumps are good!
  • Wait for bubbles to form before flipping
  • Keep warm in a low oven while cooking remaining pancakes
